Tomato, tomahto

My lovely neighbor gave me a small box of tomatoes a few days ago.  So with those and a few of my ripe ones, yesterday afternoon I got my butt in gear and made some tomato juice.

We *heart* mater juice!

I washed the tomatoes throughly, roughly cut them up, cutting out any bad spots.   Then I cooked them up until they were hot and bubbly and smelled devine.  I ran it all through the ricer, which took out the seeds and skin.  Then I salted the juice to taste and voila-

four and a half quarts of tomato juice!  I threw three in the freezer and one and half in the fridge.

Up next-grape juice!

Yummy! All these wonderful tomatoes lately are so tasty. I did a lot of tomato freezing this weekend and straind the juice into ice cube trays so they handy for soups.

I have been up to my eyeballs in tomatoes. I'm always amazed at how little actually amounts from such a big pile of tomatoes.

What is a ricer?? and where has it been all MY life! Lol!! If it gets rid of all the seeds and skins, I NEED one!!! I am also making sauce..AGAIN! Just trying to keep up with my tomatoes:) Every day off, seems like I am spending it with my tomatoes!

Michaelanne-it's like a food mill-maybe that's what I should have called it. Mine's just a tiny little thing.

AHA!!! I have one! I made applesauce with it last year!! It was ALOT of work!! Great job on the tomato sauce! I will be by for some spaghetti:)) I hope you are safe from all of the flooding impacting PA...

Yes-we are good here in western PA. But I've heard in eastern PA there is much flooding. So sad! Our little town was flooded in 1996-it's so devastating! Thank you for caring.
