I made cookies!

This was the extent of my holiday cookie baking. After about an hour and a half I had 3-4 dozen cookies and I was ready to be done. Russian tea cakes and gingerbread (my mom had given me a packet of Betty Crocker-very good, by the way).

I know many of you spend hour upon hour (sometimes-day upon day) baking cookies and I really admire you. But that's just not me. I think it has something to do with my small kitchen and small family-or perhaps I'm just lazy.

So, how long do you spend making cookies for Christmas and what are your favorite kinds to make?

well tonight i'm making sugar with Rainey and then I'm going to make about 5 others throughout the week (choc. chip with xmas m&m's, oreo balls, 7 layer, vanilla flakes, peanut butter (but I need your no flour recipe) and another candy called yuumy chocolate squares. Oh and I'm making spicy pretzels and ranch oyster crackers. I may get in some russian tea cakes too.And I don't even have a family. will post recipes and pics on my blog.

Flourless Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg
(I added a teaspoon vanilla too)

Mix together and make balls and do the fork thing and bake in a 350 degree preheated oven for about 8 minutes or until lightly golden brown. In other words-keep checking them!

well, where do i begin? pbutter blossoms, vanilla flakes, sugar, buckeyes, chex mix...and i am relying on your russian teas and jessies tassies....ya know....i share you share wink wink

They are the round gingerbread tasting ones. Soft with icing sugar on the outside. I have a weakness for them and save them for Christmas

And Jodie-I'm relying on a few of yours-don't let me have too many though. I surely don't need them.

I don't make a lot of cookies at Christmas either. This year our church group did a cookie exchange, so I made 10 dozen of one kind and got 10 dozen different ones in return. It was fun to see what everyone made and not a lot of mess on my end - one mess/one kind of cookie. My all time favorite cookie, though is my chocolate chip cookies - I make those all the time for the guys.

The boys and I will do sugar cutout cookies. They use almost every cutter they can get their hands on and by the way I kind of collect cookie cutters so you can just imagine how many shapes I have. It's fun and they decorate however they want. I may make a few others,, depending on work schedule. If I don't have time just baking these with the boys will make me happy!!!

Oh, and your Russian tea cakes look lovely in the jars!!! They are your specialty. I don't do many other kinds because the kids just like my special ones so why bother. I would love to watch Angela's Ashes again since I have read the book. I'm a sap for poor Irish folk. Must have some bloody Irish in me. Who knows?

I have been looking and looking through my recipes tonight. I just don't feel like making any this year, oh pooh. I LOVE Russian Tea cakes, mmm.
